Description
CA 'DEL BRADO was born from a very precise idea: the winery Brassicola. They handle the fermentation and processing of malted must by aging in wooden barrels with different characteristics. Believing that the evolution of this type of beer product - with an ancient tradition, but also with many opportunities for experimentation - is a natural extension of Italian craftsmanship, rich in typical local produce and with a deep culture in the world of wine. Within its borders, the woodworking (with great collaborators and the consistent use of this material in refining) and the vast world of winemaking (which produces barrels of various fermented floras) form a rich, fascinating heritage and unique that you rejoice as a backdrop In addition to refining and maturing in barrels of various varieties, Ca 'del Brado also takes care of converting the product from must to beer by studying the recipes and carrying out the fermentation (propagation and inoculation of classic yeasts and stimulation of wild yeasts). These methods turn our production facility into a wine cellar-like laboratory. The name, Ca 'del Brado, reflects in itself the characteristics of the project and wants to be the manifesto of your productive intentions. CA "to get a name associated with the territory and that it is the house where a varied flora of yeasts and bacteria can turn the raw material (must) into beers with a unique and distinctive character. BRADO consciously wants to recall two different meanings: Bradùs, a Greek etymology that means slow because your products perform maturation processes and refinements that take time (in some cases even years) and are therefore in the longest production cycles of the brewing world. In the state of Brado, where wild yeasts and bacterial / fermentative plants are used in wood, there will always be a free and somehow incompletely controllable part, as with some other fascinating processes that occur in nature.
