The Gutmann brewery looks back on over 300 years of history. In 1707 the Prince-Bishop of Eichstätt built a brewery in his Tittingen moated castle. The prince-bishops brewed beer there until secularization in 1806, before the brewery fell to the Kingdom of Bavaria. Michael Gutmann bought the brewery in 1855. Since then, the brewery has been run by the Gutmann family. Today the brewery specializes in the traditional, artisanal production of wheat yeast. The main fermentation takes place in open vats. The subsequent secondary fermentation and maturation takes place in the original bottle fermentation with lots of fresh yeast. This gives the Gutmann wheat beers a special, independent aroma.
