Birrificio Sottobisio, domiciled in Balerna (Ticino, Switzerland), was born in 2013 thanks to an idea of the owners of Bioadventures SA. In fact, the CEO of Bioadventures SA is a young industrial biotechnology engineer specializing in enzymes. The activity of these "molecular machines" is known to be the basis of brewing. Until a few years ago, enzymes were used in a very empirical way, ie without precise knowledge of how, why and at what temperature certain reactions take place. Birrificio Sottobisio's mission is to create products of the highest quality, the result of which is determined by detailed knowledge of the qualitative as well as the quantitative nature of all the reactions that take place during the maceration and fermentation processes. In order to be able to control the processes in question and make them reliably repeatable, Bioadventures has invested in the Birrificio in non-commercial equipment, which was specially designed and manufactured by Italian company BBC from Possagno (TV). The brewing plant has a capacity of around 600 liters per batch and is unique in terms of energy and ecology because its system is not based on steam but on diathermic oil. The thermal energy produced by the process of cooking is transferred to the fresh water for the next batch at the end of the process. The entire production process is controlled by the latest generation of software that allows even the most sophisticated recipes to be executed. Not only the brewing process but also the fermentation process is carefully controlled by temperature to allow the selected brewer's yeasts to work under ideal conditions at all times.
