А variation on traditional Kölsch. It's important to note that in our case this style is named after a medieval village Cölln, that was located opposite to Berlin on the River Spree long ago, instead of being traditionally named after the city of Cologne. Ancient towns were connected by a mill dam (Mühlendamm) – the only waftage at that time.
Making this style we were guided by German brewing fundamentals of the 13th century. Besides malt and hops, beer often contained various additives. As an additive in our Cöllsch, we have used cane sugar, that was extremely expensive during the Middle Ages. Paying tribute to modern Cologne, we have used the original strain of Kölsch yeast, thus providing soft aroma and clean palate.
