Dogfish Head - 90 Minute Imperial IPA

This is the only Imperial IPA in America inspired by a soup and a football game at a thrift store... In the '90s, Sam was impressed by a cooking show that showed viewers how to season soup, by constantly peppering them. As the soup simmered and simmered, the chef added pepper in small but even doses, creating a unique, bold flavor and intense savory notes. If that works with soup, why not with beer?! Inspiration sparked, and Sam knew Dogfish needed to apply this continuous dosing idea to our brewhouse hop additions. This is how our electric football game from the second-hand shop came about. Set at the right angle over the brewing pan and covered in hops instead of little dancing soccer players, the vibrating playing field would evenly shake and wiggle the hops cascading into the boiling wort. Continuous hopping was born! The continuous hopping gave our Imperial IPA a wonderful balance - it allowed us to add a daring amount of hops throughout the cook cycle without the 90 minutes becoming stiflingly bitter. With rich pine and fruity citrus flavors and a strong malt framework, 90 Minute IPA developed a pungent, outspoken flavor that led Esquire to dub it "perhaps the best IPA in America".
