Winter, when it comes, can step in with a bang or a whimper. For us, though, we look to the sky for signs of the times – we know the season’s truly turned when we see shoals of birds flying south to easy troves of African dates, tangerines and other fruits. But even among birds there are stubborn fighters who, even in spite of the harshest weather, stay true to their taste. Meet the bullfinch, in Latin ‘Pyrrhula,’ a true connoisseur and lover of viburnum, one of the world’s most northern berries.
This time we brewed a gose on a base of viburnum, saturating the aroma with full, berry notes. Pyrrhula’s deep colour evokes the plumage of northern birds, and its sour-salty taste erupts in a noisy trill among the light bitterness of red berrie
