Brettanomyces funk and tropical hop aromas characterize the beer. The recipe The recipe of the Alpha Brett is based on our beloved alpha animal. We modified it slightly and, after the main fermentation, fermented it with Brettanomcyes yeasts for many months. Brettanomyces (“Brett” for short) are yeasts that occur naturally on the peel of fruit, for example. They can ferment beers more dryly than brewer's yeast and produce characteristic aromas: sometimes earthy and leathery, but tropical and fruity when used appropriately. For Alpha Brett N ° 2 we again selected the Brettanomyces Claussenii strain. This conjures up a mild board character and ripe pineapple in the beer. Before bottling, we stuffed the beer with Mosaic hops again.
