Inspired by Zingers snack cakes, but with a taste more reminiscent of raspberry cheesecake with coconut ganache, this dessert mead is made from pressed raspberry juice, a touch of honey, concentrated marshmallow fluff, and toasted coconut. We also added lactose to enhance the flavors of marshmallow and coconut, as well as to give it a very smooth texture. Aged on white oak, which subtly complements the base mead.
