Brewer's Advent Day 15: Ueberquell Bambule Pils

Hamburg, St. Pauli. Axel Ohm and Patrick Rüther fulfilled their dream of having their own brewery in 2017. Not far from the famous fish market, they have turned the listed, historic buildings; the so-called "Riverkasematten" into the ÜberQuell Brauwerkstätten. In summer, you sit on the large terrace by the colorful lager tanks; in rainy weather (it often rains in Hamburg) inside at the large community table with a view of the pizza oven, bricked by one of the last manufactories from Naples. Notable is the small brewery museum in the corridor between the restaurant and the brewpub. There you can admire an absolute rarity: a copy of the book "Die Kunst Bier zu brawen" by Henricus Knaust. It was published in 1575 and is one of the oldest and most important beer books in the world. Only three copies have survived. One belongs to ÜberQuell. A Pilsner has been missing from the brewery's standard range until now. The ÜberQuell brewers took a long time and did a lot of fine-tuning; they wanted to create a perfect Pilsner.
