As early as 2004, the first brew was brewed in the basement of a backyard workshop in Bärenschanzstraße - and this is how the name and logo of the brewery were created. At that time, the mixture was used in disused washing kettles, sawed beer kegs were converted into fermenting vats. From January 2007, professional equipment was brewed in Adam-Klein-Straße in Gostenhof. Here we brewed mainly our special beers and smaller sude. Since the demand for our main varieties was often higher than the amount that we could produce in the Adam-Klein-Straße, we rented in a friendly Franconian Landbierbrauerei to brew Schanzenbräu to our recipe here.
