Already in the 18th century. . . . . . the Hilsenbeck lamb brewery is officially mentioned for the first time in 1728 in the books of the Swabian town of Gruibingen. Since then, the brewery has been family-owned, initially under the name Allmendinger. The brewer Allmendinger dies in 1796 at the age of only 37. A year later, his widow Anna Maria married the son of Mayor Johannes Hilsenbeck from neighboring Feldstetten. Johannes Hilsenbeck is a beer brewer and baker by profession and, together with his wife, manages the brewery's very modest property at the time. At that time, the main business was still agriculture - the brewery and the inn came second. In the beginning of the 20th century . . . . . Georg Hilsenbeck created a completely new brewery building in 1900 in the neighboring building. This means that the brewery and the inn take a larger focus in the traditional family business. But Hilsenbeck's brewery also had to survive difficult years due to the First World War and inflation. When Wilhelm Hilsenbeck took over the now traditional company in 1930, the company was looking forward to an upswing again. The construction of the motorway in the 1930s brought the family business more guests and greater awareness of the brewery and the inn in the region. Mid-1960s .... . . Hans Hilsenbeck and his wife Liselotte take over the entire business including the inn. With Liselotte Hilsenbeck the inn becomes a popular excursion destination and an established institution in Gruibingen.
