The brewery has a modern, technical brewhouse with stainless steel vats and is automated. However, brewing is done according to old principles, for example the decoction method, which is used today by only a few brewers. Even in the fermentation cellar, we do not work according to the trend of the times - namely in a short time more and more - but we allow our beer time to mature. This includes an open fermentation and after the hoses of beer a corresponding storage time in the basement. Our beers are not filtered, not short-term heated or pasteurized. Therefore their durability is limited. Long shelf life with beers is not a quality feature!
