Beer description
Terre du Sauvage is their homage to the wild heritage of Belgian farmhouse brewing. A rotating series of recipes will each showcase the unique wild cultures in their barrels as well as the ingredients used in the brew. All versions are 100% fermented in a blend of different oak barrels over several months with a mixed culture of Lactobacillus, Brettanomyces, and saison yeast. The color on the bottle indicates the recipe for each batch. Terre du Sauvage Blue starts with a 40% oat grain content. After fermentation, the brewery conditioned the beer with fresh Meyer lemon, orange, and pink grapefruit.
