Midnight Project - WKB (Wild Kveik Blueberries)

Mixed fermentation wild ale w/ blueberries. Kveik yeast at first fermentation and blend of wild yeast at secondary fermentation It's time to share with you the results of our several month long experiment. On a hot summer day we thought about creating a brew that would be really complex, interesting and would allow us to try our hand at something outside of the usual brewing process. That's how the milestone of developing our long-in-development wild ale began. To begin with, we defined a sequence of actions for ourselves. We wanted to bring versatility, tartness and add interesting nuances to the beer. In addition, we decided to make a really sour beer, for which we had to resort to mixed fermentation. For the primary fermentation we used Quake farm yeast. This gave the beer its signature estery and unparalleled flavour. After primary fermentation, we pumped the beer into the keg and added a blend of wild yeast to lower the Ph and allow it to "finish" the remaining sugars. In order to balance the acidity we used Abbey and chocolate malts, which gave the beer a nice ruby colour and softness. We decided to finish our work on a major note and added blueberry puree, which gave the beer a berry sourness and intertwined the flavours with the Kveik profile.
