Berliner Weisse is an extremely refreshing, sparkling, slightly acidic, golden-yellow, top-fermented beverage crowned with a white head. When Napoleon occupied Berlin with his Grande Armée in 1809, he christened it Champagne du Nord. Due to its acidity, this "champagne" is usually served in the glass with a shot of raspberry or woodruff syrup. At Weyermann®, dried woodruff was added in the storage cellar for this purpose. Preferably, woodruff grows at the shady edge of the forest. Its green leaves give the Weisse an earthy aroma of fresh hay alongside notes of vanilla and cinnamon.
