Pogo + Barrels + Time
18 Months ago we put some pogo into barrels to see how well it would age over a prolonged period of time. After tasting a number of barrel samples we chose this plan from burgundy red wine and bourbon barrels. Our house cultures, giving our distinctive “house” flavours are from previous beers in these barrels, and have helped make this tart, dry and light, but with a rich mouthfeel.
We chose this blend because of the stunning Lambic-like aroma, flavours of passionfruit, oak and a beautiful white wine acidity. We think this has delicious rounded fruit character, and we hope you enjoy it as much as we love it.
