Cherries + Barrels + Wild Yeasts
In 2013 we created our first ever barrel-aged pale sour called ‘Amuse Boucher’. We developed this beer into a series of ‘Amuse’ specials which provide the backbone to the sour beers we make to this day.
In making ‘Amuse Cherry’ we delve deep into the far corners of our barrel library in search of some of the very best sour beers.
The Wild Beer take on the classic Belgian Kriek involves barrels, blending and fresh English cherries. The cherries are freshly picked for us direct from the farm, then de-stemmed and hand crushed at the brewery.
1.5 tonnes of whole cherries were infused in the chosen blend of barrels, delivering a briskly tart and fruity beer with a hint of almond to finish. The result is an amalgamation of layers and complexity from the variety of different barrels used, with the cherries bringing a punchy juiciness and a succulence to the finish.
