Saule is French for "pasture" and the brewery's ninth anniversary beer. Loosely based on an old English beer that is fermented with in-house yeast starch, matured in bourbon barrels and mixed using the solera method. This means that part of the beer is stored in oak barrels and integrated into next year's production, which over the years creates more complexity and depth of character. The result is robust and complex flavors of toffee, caramel, dark fruit, vanilla and oak.
