What does it even mean ?
We love the guys at Beak, So much we’ve invited them over for another brew this year! We thought our previous beer “Bill” the DIPA was an absolute winner, so we thought lets see what we can do with our brewers beer style of choice, the lager! Ted is a pilsner, fermented with the house yeast of a very famous Bavarian brewery however hopped (very un-germanly) with New Zealnd Wai-iti and Motueka. This isn’t a Cold IPA, so don’t be expecting a barrage of tropical fruits, This is an NZ pilsner. Clean, Crisp with a delicate sweetness with soft top notes of lemongrass, kiwi and honey. We are not saying Pilsners are un-interesting, far from it, however this particular one is a very interesting pilsner.
What you need to know though
We went full German on this, until we didn’t. 100% Heidelberg Pilsner malt with a South German water profile following a decoctation mash schedule. Hopped liberally on the hot side with Spicy Wai-iti and Fruity Motueka before Fermenting super cold at 8c for over 3 weeks. Once fermentation was finished the beer received a gentle kiss of more wai-iti and motueka just to elevate the top before conditioning for 4 weeks. Everything done as it should be, except for the hops.
