How often we ignore simple things, thinking that significant milestones must necessarily be something out of the ordinary. We admire ancient Roman statues and exclaim "they have seen it all, the sunsets of empires and civilisations", but in fact there are much more interesting historical sources right under our noses. Take, for example, minestrone soup - you can learn the history of Italy and its development from the first surviving "Roman soup" from the Appletius Codex to what is now served in any Italian trattoria. That's why the third variety of our culinary range is Si, Chef: Minestrone, a soup that has travelled through the centuries, that has pleased the stomach of the brave gladiator and the subtle hipster, a soup whose recipe has changed hundreds of times to go from the "Rule of Seven", where seven types of vegetables, seven types of meat and seven seasonings were obligatory, to the most elegant simplicity, where cucina povera becomes haute cuisine.
