The idea behind the Eisbock is as follows: A beer is brewed (often stronger) and fermented. The decisive step then follows in the storage tank: the tank is brought to minus temperatures so that it "freezes". The residual liquid then drained is stronger because it is more concentrated. The frozen water remains in the tank.
