Beer description
Imperial Stout with Barrel Aged Maple Syrup is a special beer that has undergone a long and torturous process of creation.
This beer took a total of 256 days to make. The primary fermentation was done with a low aggressive yeast strain and took about 80 days. Earlier in August 2022, the oak barrel was filled with maple syrup.
When primary fermentation was complete, the stout was aged for a further 60 days at 15 degrees Celsius. After that, primary filtration was done and maple syrup was added for fermentation. After fermentation, the beer was racked and aged at 0.5 degrees Celsius.
The result of this long and painstaking process was an incredibly dense and full-bodied beer, which we think will surprise even the most sophisticated fans of this type of beer.
Imperial stout with barrel-fermented maple syrup and slow fermentation is our attempt at "low & slow" beer making.
