Beer description
This beer is a condensed version of everything we learned on our trip to the USA with our hop supplier Yakima Chief.
Over the course of a week, as well as visiting hop farms and meeting some of the major players in the US hop industry, we were lucky enough to take part in the Hop & Brew School with a hundred breweries from all over the world who had come for the occasion.
The focus was on "survivable compounds". In a few words, the aim is to translate as much as possible of the "raw" hop aroma into the finished product, i.e. the beer we brew. To achieve this, there are a number of production techniques (from brewing right through to the cold end) that we at Fauve have been striving to master as well as possible for some time now. There are also new products that further accentuate the expression of these "survivable compounds". Cryo Pop is one such product. Find out more below.
Yakima Chief's research, carried out in the laboratory (which we visited, hi hi hi) with technologies known as GC-QTOF and GC-SCD, enables the detection of previously undetectable aromatic compounds. These include compounds that are soluble in beer and resist brewing. These analyses have enabled YCH to quantify the concentrations of these soluble compounds in beer according to each hop variety, creating a framework that enables us brewers to use these varieties to generate maximum aroma.
In parallel with this research, YCH has developed a product, Cryo Pop, which is a "blend", i.e. an assembly of several hop varieties that is supposed to provide maximum aroma, especially when used in the hot part of production. So that's what we did with this beer!
"Planer au Vent des Visions" is a classic Fauve NEIPA base with pale barley malt, flakes and Verdant IPA yeast. So far, no real novelty.
But it's in the hopping that we've broken new ground.
