Collaboration with Bundobust Brewery In the run-up to National Curry Week, we've teamed up with longtime collaborator and Monk team favorite Bundobust for our latest culinary concept. The key to Gujarati-style feasting is balance - the interplay of hot, cold, sweet, tangy, tender and crunchy all blended together in one meal, sometimes even in a single bite. With so much rich and flavorful food to eat, between the spoonfuls of dal and bites of bread and bhaji, there are always bites of fruit chaat - fresh fruit dusted with a hearty chaat masala to provide welcome refreshment and contrast , which emphasizes the variety of savory flavors. We've mimicked this in beer form, adding mango and pineapple to a silky, oat-infused citra and amarillo base to create a smooth, fruity IPA that's conditioned with Kashmiri chili and salt to add that signature warming saltiness to be imitated by Chaat Massala.
