As we close our eyes and embark on an imaginary tour of Hong Kong's street markets, our senses are flooded with the deep reds of lacquered roast duck and char sui pork, and the heady smells of caramelizing sugar mingling with woody spices remind us of a seemingly unlikely comparison - the deep caramel bittersweet of West Coast IPA. We took Columbus, Centennial, Citra, Mosaic, Idaho 7 and Rakau and cranked it up to Imperial strength to create that sensory bombardment.
