Luckily, we do not lack Ramen heads in the office, and to top it off, we knew that two more of New York's biggest Ramen fans came to Leeds just in time. Kevin and Basil of Finback Brewery. We contacted them and started compiling this Yuzu IPA, a fruit synonymous with this Asian cuisine. To supplement the spicy, spicy nature of the fruit, we wanted a base that was fluffy and round, yet light enough to contribute to a refreshing drink. We went with Pilsener malt and a large portion of wheat and supported them with small portions of wheat flakes and oats as a base. The idea behind it was to put together a malt profile reminiscent of the Wit style, but still had the soft character of a Northern Monk - Finback IPA. We fermented with our house IPA strain and added Yuzu juice at the far end. Finally, we dried with Citra and Mosaic. Generous but not high enough to hide the unique taste of Yuzu.
