Spontaneous, sour
Fermentation
Beer description
The Imperial Saison with fruits is the result of a mixed fermentation (saison yeasts and brettanomyces) and a maceration of 85 kg of fruit for two months. It has a stimulating orange color with a cloudy veil, topped with a rich ivory mousse tile that releases bubble gum aromas where raspberry, peach, mango and passion fruit are intertwined. The palate, rather dry and with a discreet alcohol content for such a high content, is an explosion of fruit dominated by raspberry, slightly spicy, a dangerous combination leading to deliquescence.
