Beer description
"La mer à boire" is a Corsican variant of the Oyster Stout, which is very popular in countries such as England and Belgium.
Sea urchins, or 'i zini' in Corsican, are the most emblematic and prized seafood on the Isle of Beauty. Their characteristic red flesh and the water micro-filtered by their test (carapace) were incorporated into the brewing process. The spines were used for filtration, in the same way as oyster shells were originally used to filter brown ales.
The resulting sea urchin notes combined with the roasted brown malts promise a superb tasting experience.
