Jaws Brewery - Chimera

A hybrid of wild ale and honey. The wild ale underwent a multi-stage fermentation in wine casks with a blend of different yeasts and bacteria. The honey component was fermented separately and blended with the "wild" part in the proportion corresponding to the chosen flavour trajectory.
