Beer description
Berry-cherry, refreshingly sour, with a subtle sweetness at the end of the sip.
Bonom belongs to the mixed fermentation category. The primary fermentation of the wort takes place on a pure yeast culture in the CKT. The young beer is then pumped into an oak barrel for maturation. There it stays for six to nine months, getting infected with the character of the wild yeast, after which it is aged on natural cherry for a few weeks.
