Our Muscadine Sour Ale spent 2 weeks in stainless tanks for primary fermentation before going into oak barrels on our house Brettanomyces for a full 20 months. One month bottle conditioning in 750mL cork-and-caged Cali glass brought this release from our sour and wild ale program on the South Slope to peak maturity.
Aroma notes for this very fine creation include muscadine, muscadine, and also muscadine. Soccer field grape juice and white Gummy Bears also spring to mind. The slightest of hay and barnyard funk from our house brett brings the flavors together in this barrel-aged sour ale that finishes clean.
