Beer description
Apricot Shallow Back Mixed Culture Berliner Weisse with fruit is markedly different from its base. We took a single barrel of Shallow Back, a mixed culture Berliner Weisse and refermented it on 75# of fresh apricots from Noffke farms in Michigan. It displays notes of vanilla, sourdough bread and barn on the nose, with a full mouthfeel and moderate acidity. We did not pitch any brettanomyces into this beer, its present character comes from the naturally occurring yeast on the skins of the fruit.
