This year, we've taken the complexity of wood to a new level by doing something we've never done before: We refined a fully ripened Bourbon County stout with toasted fruitwood - specifically honeycomb-shaped cherry wood chips. The versatility of the cherry wood and the honeycomb shape allowed maximum flavor extraction and brought out complex properties such as red fruits, ripe cherries and light toffee that cannot be found in the original oak barrel itself. The result is an amazing increase and a clear difference to our original Bourbon County Stout.
