Beer description
Mixed Fermentation Farmhouse Saison.
Brewed in 2017. The initial beer wort was first main fermented in an open 500 L wooden vat with mixed wild yeasts.
then the Saison was allowed to develop in Austrian Blaufränkisch barrels for 2 years with the addition of Belgian wild yeasts, before aging in bottle fermentation for another 1 year.
The result is a wonderfully complex and interpretive beer: funky & sour, herbal & floral, delicate & refreshing.
Malt: Monroe Pilsner, wheat, caramel malt light, caramel malt red.
Hops: Hallertau pearl
Yeast: Wild yeasts
