/ At Christmas we ate oysters. 720 oysters. We reused the shells the next day to macerate them in a stout brew.
Supported by the addition of exceptional iodized tea, a lovely salinity is revealed, marrying wonderfully with the notes of coffee, cocoa and toast of the stout. Imagine dark chocolate with a hint of salt, we're not far off!
