Firestone Walker Brewery - Pale 31

Firestone Walker uses exclusively selected hops from the Northwestern United States for its pale ale. Pale 31 is a cuvée. It consists of conventionally brewed beer and beers brewed in the so-called "Firestone Union Process", an evolution of the traditional "Burton Union Method". When the behavior of the yeast was not controlled by temperature control, the beer often foamed from the barrels. The overflowing liquid was collected and later filled into the barrel again. This circulation produces a particularly active yeast that gives the beer its unique taste. Firestone uses barrels of American oak.
