Beer description

Limited special brew from the wooden barrel. Produced using an old mashing process in which part of the mash is removed and boiled. This makes the beer more full-bodied. As befits a stately doppelbock, after two weeks of main fermentation it is racked into the lager cellar in fermentation vats. There it is then allowed to rest for a full 6 months in a horizontal storage tank. The brew comes out of the cellar at the beginning of January. Unfiltered with an amber color and a creamy white foam, it flows into the glass. The nose reflects a slightly malty sweetness surrounded by a fruity bouquet of hops. In the mouth, the bock unfolds its full maturity, the sweet malt sugar is balanced by harmonious roasted malt notes. The front wort is freshly hopped with Tradition and refined with Saphir and Comet. The Hallertau varieties do not make the bock too sweet and elegantly conceal the alcohol content.
