Fermentation
Beer description
Farmhouse beer, brewed using Den Herberg's 18-month-old lambic as a fermentation starter on a specially created malt base with Pilsner malt, wheat, rye, and Suranné hops.
On the nose, citrusy lemon notes give way to fruity and cellar-like aromas.
In the mouth, its acidity is elegant, with a rustic profile and a very slim body.
The woody nuances from the barrel aging process and the strong funky character are clearly noticeable.
A complex and rustic beer, which thanks to its elegant acidity, is very drinkable and allows for interesting combinations with dishes such as fish.
