Beer description
Get Back Journals is a spontaneously fermented WILD ALE with the addition of passion fruits.
The specially crafted wort is stored in the best barrels of the cellar, where it begins a slow fermentation process that lasts from October to February. After maturation and refinement, the passion fruit is added, blending with the sour and wild profile and adding extra freshness to the beer.
It has an apricot color and a beige foam.
Immediately, the nose detects the exotic aroma of passion fruit, transitioning into wild and rural notes of cut grass, mold, and cellar.
In the mouth, despite the complexity of the beer, it is soft and light. Its medium body gives the drink fullness and structure; the acidity and freshness of the passion fruit round out and enrich the drink.
Get Back Journals is a complex yet drinkable beer that combines the tradition of spontaneous wild fermentation with the modernity of current production and a contemporary taste.
