Beer description

The first collaboration with Dandelion Chocolate, a bean to bar chocolate from San Francisco, USA. This time, Dunkel style beer is made with cocoa nibs and chocolate from Dandelion Chocolate's Tanzanian cocoa beans, harvested in 2015. Enjoy the brown hue, the balance between the full-bodied sweetness from the malt and the mellow aroma of the cocoa, and the clean, crisp taste that only bottom-fermentation can provide. A bottom-fermented beer inspired by Dunkel, a beer traditionally brewed in the Bavarian region centred on Munich, Germany, where Dunkel means 'dark' in German and is usually made with a portion of roasted malt to give the beer a darker colour and aromas of coffee, cocoa and chocolate. The beer is usually darkened by the use of some roasted malt, which imparts a coffee, cocoa or chocolate-like aroma to the beer. Instead of roasted malt, cocoa nibs and The beer is finished with cocoa nibs and chocolate instead of roasted malt, so that the original cocoa aroma can be enjoyed together with the beer. The aim was to create a beer with a clean, unctuous taste that can only be achieved with bottom-fermentation, without overemphasising the aroma of hops and yeast, and with a good balance between the full sweetness derived from malt and the savoury cocoa aroma. Chocolate, cocoa nibs and cocoa beans The cocoa beans come from Cocoa Kamiri, a start-up social enterprise in southern Tanzania that also operates its own cocoa fermentation plant. Cocoa Kamiri purchases fresh cocoa from farmers within a 15 km radius of its fermentation plant and ships it under strict standards, thereby contributing to increasing the price of cocoa in Tanzania as a whole. The beans harvested this time were collected by Cocoa Camiri from 1,519 farmers, and have a distinctive and diverse range of flavours. The classic cocoa taste is enhanced by a grapefruit-like fruitiness, with a creamy caramel aftertaste. The beans were chocolated and melted into the wort, while the cocoa nibs were soaked in the beer. Malts used Pilsner, Munich, CaraHellCaraAroma, Acidulated  Hops used Merkur, Saphir, Aurora.
