Beer description

Cantillon Gueuze is the Belgian beer par excellence - a perfect blend of one, two and three year old lamb. Tart and slightly sour, Cantillon Gueuze is the real champagne among beers. It is fermented only with wild air yeast from the Brussels Senne valley and matured in centuries-old oak barrels. It is also certified organic in Belgium. A true world classic that will inspire true beer connoisseurs. During late winter and early spring, the Cantillon family brewers will match and blend one, two and three year old lambic for a balanced texture and flavor. In general, the younger lambic is thinner, livelier, and milder on the palate; the older lambic is harder, more complex and penetratingly sour. However, the beer in each barrel is unique, and one three year old lambic can be radically different in taste from another. There is no formula for mixing and no expectation of year-to-year consistency. Brewmaster Jean-Pierre Van Roy simply says that he hopes for the same "harmony" every time.
