To celebrate the 200th brew and our 2nd anniversary in Mauguio in style, we wanted to release not 1 stout, but 2! So we divided the brew into 2 small vats to make different finishes, both inspired by desserts we love. "Canelé de Mauguio" is not without its alter ego: "Tiramisu d'Occitanie".
This anniversary beer starts with a base of super gourmet imperial stout, boiled for 12 hours to celebrate our 200th brew. For those who have already tried their hand at brewing ('amateur' or 'pro'), we're on an initial specific gravity of 1.155 (35.3 plato). It just doesn't make sense! A single promise for these 2 beers: decadence and gourmandise.
"Canelé de Mauguio", with a single N, like the delicious Bordeaux pastries with their caramelized crust, melting center, and beautifully flavored with rum and vanilla. We blended kilos of Papuan Red Vanilla (from David Vanille), which we steeped in Réunion Island rum for several weeks. We then passed the stout through our hopgun with the vanilla, rum, a few handfuls of oak shavings to boost the woody notes of aged rum and salted butter caramel extract.
With this imperial stout base of crazy decadence, ultra-rich and gourmet, where the chocolate and caramel malts express themselves particularly well, the addition of vanilla and rum brings this liquid dessert closer to the pastry to which it pays homage.
