Spontaneous, sour
Fermentation
Beer description
We were brought together by our brewmaster, Előd Varju, who is currently working with the Canadian Category12 brewery. At the first brainstorming session of the collaboration, we knew we wanted two beers and thought of two very extreme pieces, given the possibilities. By the end of the brainstorming, we were reassured that we and Frodo were driven by the same goal. And looking at the finished products, we were delighted to see that we had managed to get back to our old form.
Of the two cola beers, this one turned out to be the really crazy idea, as we wanted to put together a fruity sour that (of course) had something to do with Canada. And what could have been a more perfect choice than a fruit and maple syrup combo. We put in loads of fruit, blueberries, cranberries, and in addition, vanilla and maple syrup. Thanks to the wheat flakes and lactose, we got a creamy beer that really gives back the feeling of a healthy (Canadian) breakfast, similar to our older Breakfast Sour beer. Contrary to the label's graphics, it doesn't include pancakes, a reference to the Canadian breakfast American pancake topped with cranberry/blueberry syrup and maple syrup. Of course, its 9.2% alcohol is not incidental either.
