Saison matured for 9 months in barrels of 3-year-old gin from the Distillerie du St. Laurent, which had itself aged in barrels containing our Genèse Sauvignon. All refermented with Breton yeast. Herbaceous profile, fruity aromas, dry, malty finish. A real cocktail!
