We didn't want this to be jagged on steroids. So instead of using the same hop combination, we chose more fruit hops to balance the alcohol in the beer. The medium crystalline malt adds a very subtle color and sweetness. Nugget and Millenium hops are used to be bitter. Citra is a new variety on the market that has similar properties to Simcoe but has a pleasant fruitiness. Pineapple / mango flavors mixed with pine and cat pee. Centennial brings candied oranges and Amarillo adds big grapefruit. The liquid in the fermenter is guarded three times - each dry hop is equilibrium to Jagged Edge's dry hop. This multi-stage dry hopping is supposed to layer the different hop aromas. The beer is cold fermented to suppress the development of melted alcohol, and the dextrose is added to allow it to weaken considerably, leaving very little residual sugar. The idea was to avoid this syrupy "gumsmacker" effect that is sometimes found in Imperial IPAs. Unlike barrel aged beers, this is by far our labor-intensive and expensive beer to make. Rampage fans are legion and we believe they deserve nothing less than the best we can give them.
