In the glass (a sparkling wine flûte is recommended) it appears golden, limpid, with hints of honey.
The fruit gives great complexity: there are notes of minerals, hydrocarbons, honey (acacia), flowers (geranium, rose), white fruit (melon, pear, peach). On the palate the alcohol gives warmth, roundness, supported by high gassing and a dry, clean finish with a slightly herbaceous finish. Elegant, refined, ruffian and...dangerous.
Suggested pairings: mature cheeses (also blue-veined), lard, cooked salami, mixed fried meats, lamb chops.
