Xyayù Kioke is matured in an unlocked wooden barrel made of cypress wood, which was previously used in the production of soy sauce - by Yasuo Yamamoto on the Japanese island of Shodo. With this unique ripening project, Teo Musso is once again exploring the possibilities of flavor imprinting through oxidation. The beer is dark ruby red and clear in the glass. Due to the pressureless ripening, no foam remains in the glass. The scent is reminiscent of cypresses, dates and caramel. In the taste there are woody notes, dried fruits, herbal aromas, a little bitter and a skilful acidity. Finally, there is a strong warming effect on the palate.
