The contents of this bottle represent a two-year experiment of the effects of Brettanomyces on a bourbon barrel-aged beer. "Brett" is known to consume certain flavour and aroma compounds and transform them into new ones, adding layers of complexity and nuance, to create an entirely new and exciting taste experience. For this experiment, we chose our holiday spiced ale Yule. Yule contains wonderful aromas of cinnamon and honey, which were then complemented with a year of bourbon-barrel ageing adding layers of vanilla and spice. We then transferred the beer into French red wine barrels inoculated with our house Brettanomyces yeast strain for an additional year of ageing.
