This cider consists of 2/3 Dolgo juice and 1/3 grey pear juice. Dolgo - the crab apple - hand harvested, hand pressed and left to ferment spontaneously in a rum barrel. The organic grey pears were also hand harvested, hand pressed and left to ferment spontaneously in a rum barrel. 180 liters of Dolgo cider and 90 liters of grey pear perry were blended together and bottled. Made with 2018 season fruits -> the summer without rain that made the sugar content in all our fruits higher than normal. Which gives more alcohol. Limited edition, very acidic and refreshing, but still with some residual sugars. Complex and with a great appley nose. Bottle conditioned.
