Four way collaboration with Ale Apothecary, Crooked Stave and Breakside Brewery. We filled our open-top barrels half full with cherries straight off the trees. Then we jumped. American and Norweigen feet turned red and we blended the cherry mash with gently salted wort and wild yeast from each of the four breweries. Secondary fermentation in old red wine barrels, tertiary fermentation in oak vats with 40℅ cherry added. And quarternary fermentation = bottle conditioning.
